Tell me more about El Botón
Automatic Kaffeemacher brew coffee differently than portafilter machines. This raises the question: which coffee bean is suitable for an automatic Kaffeemacher? With our understanding of coffee, we seek beans that bring plenty of body and a full texture. Rather than roasting the coffee very dark, we extend the roasting process and have thus developed a roast profile specifically for the automatic Kaffeemacher. The coffees come from our friend César Marin, from whom we have been purchasing coffees since 2023, and from Bharath Belliappa from India, whom Nadja visited for the first time in spring 2026. El Botón brings together all our demands for a coffee: consistently transparent sourcing of green coffee, the respective conscious production of both producers, clear aromatics, and precise roasting.
Why does the coffee taste the way it does?
We opted for a blend to combine two attributes: lighter aromas (Peru) and a more classic aftertaste (India). César's coffee from Peru brings a soft texture and slightly floral notes. Bharath's Robusta from India gives the coffee a strong character and emphasizes the aftertaste.
How do we roast this coffee?
The coffee distribution in the brew chamber and the lower brew pressure in the automatic Kaffeemacher inspired us to take a different approach to roasting. Unlike an espresso for a portafilter machine, where we gradually reduce the gas supply, we increase it again in the final quarter of the roast. This gives the coffee, at a medium roasting time, a higher final temperature, which imparts the caramel notes.
